Ingredients
1 cup unsalted butter
1 cup light brown sugar, packed
1/4 cup granulated sugar
2 large eggs
2 tablespoons maple syrup
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
2 cups apples, peeled and chopped
8 oz cream cheese, softened
1 cup light brown sugar, packed
2 tablespoons maple syrup
Instructions
Preheat oven to 350°F. Spray a 9×13″ baking dish with cooking spray
Melt butter in a large heatproof bowl, then let cool slightly
Add brown sugar and granulated sugar, mix until well combined
Add eggs, maple syrup, and vanilla, mix until combined
Add flour, cinnamon, baking powder, and salt, mix until no dry flour remains
Fold in chopped apples with a spoon until evenly distributed
Transfer batter to prepared baking dish and spread evenly
Bake for 25-30 minutes until toothpick comes out with moist crumbs
For frosting: beat cream cheese and brown sugar until smooth
Add maple syrup and mix until well combined
Once blondies are completely cool, spread frosting evenly on top
Slice into 16 pieces and serve
