Ingredients

  • All-purpose flour – provides structure for the dough
  • Baking powder – helps the scones rise and become fluffy
  • Salt – enhances overall flavor
  • Cold unsalted butter – creates flaky texture when baked
  • Cooked bacon – adds smoky, savory flavor
  • Pepper Jack cheese – melts into the dough with spicy richness
  • Fresh jalapenos – bring heat and freshness
  • Buttermilk – keeps the dough moist and tender
  • Egg – enriches the dough and helps bind it
  • Cream or melted butter (optional) – brushed on top for golden finish

Instructions

  1. Dice cold butter, cook and crumble bacon, chop jalapenos, and shred cheese.
  2. Mix flour, baking powder, and salt in a bowl. Cut in butter until mixture is crumbly.
  3. Add bacon, cheese, and jalapenos, mixing evenly.
  4. Pour in buttermilk and beaten egg; stir until dough forms without overmixing.
  5. Transfer dough to a floured surface, pat into 1-inch thick circle or rectangle, and cut into 8 pieces.
  6. Place scones on a baking sheet lined with parchment paper.
  7. Chill for 10 minutes to help set shape and improve texture.
  8. Preheat oven to 400°F (200°C). Brush tops with cream or melted butter if desired.
  9. Bake for 18–22 minutes or until golden brown. Let cool slightly before serving.

Notes

  • Use cold butter for best flaky texture.
  • Don’t overwork the dough to avoid toughness.
  • Adjust jalapeno heat by removing seeds or reducing amount.
  • Freeze unbaked scones and bake from frozen when needed.
  • Store baked scones in an airtight container and reheat before serving.
