Ingredients

  • 1 pint cherry or grape tomatoes
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Preheat oven to 400°F (200°C)
  2. Toss cherry tomatoes with olive oil, salt, pepper, and optional oregano
  3. Spread tomatoes on parchment-lined baking sheet in single layer
  4. Roast for 20-25 minutes until blistered and lightly browned
  5. Let tomatoes cool for 5-10 minutes
  6. Arrange spring mix on large serving platter
  7. Scatter fresh mozzarella medallions evenly over greens
  8. Spoon roasted tomatoes over salad, including pan juices
  9. Drizzle balsamic glaze in zigzag pattern
  10. Add final drizzle of olive oil and season with salt and pepper
  11. Serve immediately while tomatoes are slightly warm
