Ingredients

  • 6 Roma tomatoes, diced
  • 1/3 cup fresh chopped basil
  • 1 tablespoon minced garlic
  • 1/4 cup balsamic vinaigrette (or 2 tbsp olive oil + 2 tbsp balsamic vinegar)
  • 1 package stuffing mix (6 ounces), herbed or chicken flavor
  • 24 tablespoons water (optional, to moisten stuffing mix)
  • 1.5 pounds chicken breasts, uncooked, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine diced tomatoes, chopped basil, minced garlic, balsamic vinaigrette, and stuffing mix. Add water if the mixture is too dry.
  3. Spread the chicken pieces evenly in a 13″x9″ baking dish. Season with salt and pepper.
  4. Sprinkle the chicken with mozzarella and Parmesan cheese.
  5. Top with the bruschetta-stuffing mixture.
  6. Bake uncovered for about 30 minutes, until chicken is cooked through and the top is golden and slightly crisp.
  7. Let it rest for 5–10 minutes before serving.

Notes

  • Use canned diced tomatoes (15 oz, half-drained) if fresh tomatoes are out of season.
  • Rotisserie chicken can be used instead of raw chicken. Reduce bake time by 5–7 minutes.
  • Broil for 1–2 minutes at the end for a crispier topping.
  • Great for meal prep—assemble ahead and refrigerate up to 24 hours before baking.
