Ingredients

  • ½ pound lean ground beef
  • ½ cup diced yellow onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoons taco seasoning
  • 8 ounces block of Colby jack cheese, shredded
  • 12 ounces bag of tortilla chips (Tostitos brand, use about of the bag)
  • Cooking spray
  • Optional toppings: sour cream, diced tomatoes, chopped cilantro, sliced black olives, pickled jalapeños, guacamole, diced avocado, pico de gallo

Instructions

  1. Preheat oven to 450°F and spray a 12-cup bundt pan with cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef, diced onion, salt, and pepper until no pink remains, about 6–7 minutes. Drain excess fat.
  3. Add water and taco seasoning to the skillet. Stir and cook for 2–3 more minutes until liquid evaporates. Remove from heat.
  4. Layer half the shredded cheese at the bottom of the greased bundt pan. Add half of the beef mixture and then ⅓ of the tortilla chips.
  5. Repeat with the remaining cheese, beef, and another ⅓ of chips. Avoid overfilling or packing tightly.
  6. Bake for 10 minutes at 450°F until cheese is melted and edges are crisp.
  7. Place a large heatproof plate over the bundt pan and flip it to release the nacho ring onto the plate.
  8. Gently remove the pan and top the nachos with your favorite garnishes. Serve immediately.

Notes

  • Do not overfill the bundt pan—cheese may stick and chips won’t heat evenly.
  • Shred your own cheese for better melting results.
  • Prepare the beef mixture up to 2 days in advance to save time.
  • Serve immediately after baking for the best crunch.
