Ingredients

Instructions

  1. Remove pits and chop cherries (or thaw frozen ones).
  2. Combine cherries, sugar, lemon juice, and water in a saucepan.
  3. Heat and mash the fruit slightly with a spoon or masher.
  4. Simmer on low heat, stirring often, for 25–40 minutes until thickened.
  5. Stir in vanilla extract or scraped vanilla bean seeds.
  6. Add pectin if using and cook for 2–3 more minutes.
  7. Check consistency using the cold plate method or a thermometer (220°F).
  8. Pour hot jam into sterilized jars, seal, and let cool.
