Ingredients
Cherries – sweet or tart, fresh or thawed frozen, for a rich fruity base
Sugar – enhances sweetness and acts as a preservative
Lemon Juice – brightens flavor and activates natural pectin
Vanilla Extract or Bean – adds smooth, floral depth
Pectin (optional) – helps achieve a firmer, gel-like consistency
Water – assists with even cooking and prevents sticking
Instructions
Remove pits and chop cherries (or thaw frozen ones).
Combine cherries, sugar, lemon juice, and water in a saucepan.
Heat and mash the fruit slightly with a spoon or masher.
Simmer on low heat, stirring often, for 25–40 minutes until thickened.
Stir in vanilla extract or scraped vanilla bean seeds.
Add pectin if using and cook for 2–3 more minutes.
Check consistency using the cold plate method or a thermometer (220°F).
Pour hot jam into sterilized jars, seal, and let cool.
Notes
Frozen cherries work well and save prep time.
Adjust sugar based on sweetness of cherries.
For a stronger vanilla flavor, steep the pod in the jam during cooking.
