Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/2 cup creamy peanut butter (like Jif or Skippy)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3/4 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips
  • 1 cup red and green holiday M&M’s (reserve 1/4 cup for topping)

Instructions

  1. In a large bowl, cream together butter, brown sugar, and granulated sugar for about 4 minutes until light and fluffy.
  2. Add peanut butter, egg, and vanilla extract. Beat for 1 more minute until well combined.
  3. Fold in oats, flour, baking soda, and salt. Mix just until combined.
  4. Stir in chocolate chips and 3/4 cup of M&M’s, reserving 1/4 cup for topping.
  5. Cover the dough and chill for 30 minutes.
  6. Preheat oven to 365°F (185°C). Scoop dough onto a light-colored baking sheet, spacing 2 inches apart.
  7. Bake for 9–10 minutes until edges are set but centers appear slightly underbaked.
  8. Remove from oven and immediately press remaining M&M’s into the tops of the cookies.
  9. Let cookies cool on the baking sheet for 5–10 minutes before transferring to a wire rack.

Notes

  • Do not overbake—cookies should remain soft and chewy in the center.
  • Chilling the dough helps prevent spreading during baking.
  • Use creamy peanut butter (not natural) for best texture.
  • Store in an airtight container for up to 3 days or freeze for up to 2 months.
  • Customize with white chocolate chips, crushed peppermint, or sprinkles for variety.
