Ingredients

  • 1/2 cup brown sugar, packed
  • 1 1/2 teaspoons cinnamon
  • 1 large apple (Fuji, Gala, or Granny Smith), peeled and chopped (about 1 1/2 cups)
  • 2/3 cup granulated white sugar
  • 1/2 cup salted butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 pinch sea salt
  • 1/2 cup milk (dairy or plant-based)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  2. In a small bowl, combine brown sugar and cinnamon; set aside.
  3. Peel, core, and chop the apple into small chunks.
  4. In a large bowl, cream softened butter and granulated sugar until light and fluffy.
  5. Beat in eggs and vanilla extract until smooth.
  6. In another bowl, whisk together flour, baking powder, and salt.
  7. Gradually add the dry mixture to the wet mixture, alternating with milk, until just combined.
  8. Pour half the batter into the prepared loaf pan. Sprinkle with half of the chopped apples and half of the cinnamon-sugar mixture.
  9. Repeat layers with the remaining batter, apples, and cinnamon sugar.
  10. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use Granny Smith for a tart contrast, or Gala/Fuji for sweeter flavor.
  • Do not overmix the batter to avoid a dense texture.
  • For gifting, bake in mini loaf pans for 25–30 minutes.
  • Freeze slices individually wrapped for up to 3 months.
