Ingredients

  • 3/4 cup salted butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg + 1 egg yolk
  • 1 tbsp corn syrup
  • 1/2 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup Dutch processed cocoa powder
  • 1/2 tbsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips (for ganache)
  • 4 oz heavy whipping cream
  • 1/3 cup candy coated chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add egg, egg yolk, corn syrup, and vanilla extract. Mix well.
  4. Stir in flour, cocoa powder, cornstarch, baking soda, and salt until a soft dough forms.
  5. Portion dough into 1½ tbsp scoops, roll into balls, and slightly flatten into a hockey puck shape.
  6. Place on parchment-lined baking sheet and bake for 8–10 minutes until edges are set and tops slightly cracked.
  7. Cool cookies on pan while preparing ganache.
  8. Heat heavy cream in the microwave until steaming. Pour over chocolate chips and let sit 5 minutes.
  9. Stir ganache until smooth. Microwave an extra 15 seconds if needed for complete melting.
  10. Spread ganache on cooled cookies and top immediately with candy coated chocolate chips.
  11. Store in refrigerator for up to 5 days or freeze for up to 3 months.
