Ingredients

Scale
  • pounds boneless skinless chicken breasts
  • 2 cups chicken broth
  • 1 packet ranch seasoning
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, fried and crumbled
  • ¼ cup green onions, chopped

Instructions

  1. Add chicken breasts, broth, and ranch seasoning to the Instant Pot.
  2. Seal and cook on high pressure for 18 minutes. Let pressure release naturally for 10 minutes.
  3. Remove chicken and shred it using forks. Set aside.
  4. Turn Instant Pot to sauté mode. Add softened cream cheese and whisk until melted.
  5. Add shredded cheddar cheese and whisk until smooth.
  6. Return shredded chicken to the pot. Stir in bacon and green onions.
  7. Serve hot with optional toppings like extra bacon, cheese, or green onions.

Notes

  • Use ranch seasoning, not ranch dip mix, to avoid oversalting.
  • Soften cream cheese before adding to prevent clumping.
  • Can substitute chicken thighs for a richer flavor.
  • Rotisserie chicken works well for a quicker version.
  • Can be frozen, but reheat gently to avoid separation.
