Ingredients

  • 4 oz (113 g) cream cheese, softened (brick-style only)
  • 1 tablespoon salted butter, softened
  • 4 cups (500 g) powdered sugar, plus more as needed
  • 1/2 teaspoon peppermint extract
  • 1/8 teaspoon vanilla extract
  • Food coloring (optional)
  • Granulated sugar (optional, for molding)

Instructions

  1. Let cream cheese and butter sit at room temperature until softened.
  2. In a large bowl or stand mixer, beat cream cheese and butter until smooth and creamy.
  3. Add 2 cups of powdered sugar and mix until well combined.
  4. Add peppermint and vanilla extracts and mix until evenly incorporated.
  5. Gradually add the remaining powdered sugar while mixing on low speed, scraping the bowl as needed. Dough should be stiff and not sticky.
  6. If using food coloring, divide dough and add color to each portion as desired.
  7. Roll dough into teaspoon-sized balls and place on a wax paper-lined baking sheet.
  8. Dip a fork in powdered sugar and gently press down on each ball to flatten.
  9. Let mints dry at room temperature for several hours until firm.
  10. Store in an airtight container in the refrigerator or freezer.
