Ingredients

Scale
  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped fresh apples (Honeycrisp, Fuji, or Granny Smith)
  • ½ cup chopped nuts or raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, combine melted butter, granulated sugar, brown sugar, eggs, milk, and vanilla extract. Whisk until smooth.
  4. Gradually fold dry ingredients into the wet mixture. Stir just until combined—do not overmix.
  5. Fold in chopped apples and any optional add-ins like nuts or raisins.
  6. Pour the batter into the prepared loaf pan and smooth the top evenly.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, cover loosely with foil for the last 10 minutes.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use firm apples like Honeycrisp or Granny Smith for best texture.
  • Do not overmix the batter to keep the bread light and soft.
  • Wrap tightly and store at room temperature for up to 3 days or freeze for up to 2 months.
  • Add a vanilla glaze or cinnamon streusel topping for a bakery-style finish.
  • Replace each egg with ¼ cup applesauce for an egg-free version.
