Ingredients

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, and optional nutmeg.
  3. In another bowl, whisk eggs, sugar, oil, and vanilla extract.
  4. Combine wet and dry ingredients, then fold in grated carrots.
  5. Fill each muffin cup halfway with the carrot cake batter.
  6. In a separate bowl, beat cream cheese until smooth, then add sugar, egg, and vanilla extract and mix well.
  7. Spoon the cheesecake mixture over the carrot cake batter in each cup.
  8. Bake for 18–22 minutes or until centers are set and a toothpick comes out clean.
  9. Cool at room temperature, then refrigerate for at least 2 hours before serving.
