Ingredients

Scale
  • 4 cups fresh or frozen cherries, pitted
  • 3/4 cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.
  2. In a large bowl, combine cherries, 1/2 cup sugar, lemon juice, and cornstarch. Stir well and transfer to the prepared baking dish.
  3. In another bowl, whisk together flour, remaining 1/4 cup sugar, baking powder, and salt.
  4. Stir in milk and melted butter until just combined to form a smooth batter.
  5. Pour the batter evenly over the cherry mixture without stirring.
  6. Bake for 40–45 minutes, until the top is golden brown and the filling is bubbling around the edges.
  7. Allow to cool for 15–20 minutes before serving to let the filling thicken.

Notes

  • If using frozen cherries, thaw and drain well before mixing.
  • Do not stir after adding the topping; it will rise naturally while baking.
  • Adjust sugar depending on the sweetness of your cherries.
  • Serve warm for best flavor and texture.
