Ingredients

  • 2 large English cucumbers, thinly sliced
  • 1 cup sour cream
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons thinly sliced red onion (optional)

Instructions

  1. Wash and thinly slice the cucumbers.
  2. Place the cucumbers in a colander, sprinkle lightly with salt, and let sit for 10–15 minutes to release excess moisture.
  3. Pat the cucumbers dry with paper towels.
  4. In a bowl, whisk together sour cream, vinegar or lemon juice, sugar, salt, and black pepper until smooth.
  5. Add the cucumbers to the dressing and gently toss to coat.
  6. Fold in fresh dill and red onion if using.
  7. Refrigerate for 20 minutes before serving, then stir and adjust seasoning if needed.
