Ingredients

Scale
  • 4 cups nectarines, sliced
  • 4 cups plums, sliced
  • 1/3 cup brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 cup old-fashioned oats
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash, pit, and slice the nectarines and plums.
  3. In a large bowl, combine nectarines, plums, brown sugar, cornstarch, lemon juice, ginger, and cinnamon.
  4. Transfer the fruit mixture to a greased 9×13-inch baking dish.
  5. In another bowl, mix oats, flour, brown sugar, cinnamon, and salt.
  6. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  7. Sprinkle the crumble topping evenly over the fruit filling.
  8. Bake for 40 to 45 minutes, or until the topping is golden brown and the fruit is bubbling.
  9. Allow the crisp to cool for 10 to 15 minutes before serving.
  10. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

  • Use ripe but firm nectarines and plums for the best texture.
  • Old-fashioned oats provide a crispier topping than quick oats.
  • If the fruit is very sweet, reduce the brown sugar slightly.
  • Allow the crisp to rest before serving so the juices can thicken.
  • Store leftovers covered in the refrigerator for up to 4 days.
  • Reheat in the oven for the best texture.
  • The crisp can be assembled ahead of time and baked when needed.
