Instructions

  2. Chop dried figs and soak in warm water or juice for 10 minutes if using.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, mix eggs, brown sugar (or honey), melted butter (or oil), milk, and vanilla extract.
  5. Combine wet and dry ingredients gently, mixing until just incorporated.
  6. Fold in chopped figs and any optional mix-ins like nuts or chocolate chips.
  7. Divide batter evenly among muffin cups (about ¾ full).
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
