Instructions

  1. Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden. Remove and set aside.
  3. Reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Stir in tomato paste and cook briefly until slightly darkened, then add diced tomatoes, balsamic vinegar, and red pepper flakes.
  5. Simmer the sauce for 8–10 minutes until thickened, stirring occasionally.
  6. Return chicken to the pan, nestle it into the sauce, and spoon sauce over the top.
  7. Cover and simmer for 10–12 minutes, or until chicken reaches 165°F (74°C) internal temperature.
  8. Optional: Sprinkle with mozzarella or parmesan and let melt into the sauce before serving.
  9. Garnish with fresh basil or parsley and serve with pasta, rice, or crusty bread.
