Ingredients

  • 3/4 cup natural peanut butter
  • 3/4 cup canned pumpkin puree
  • 2 eggs
  • 1/2 cup maple syrup or honey
  • 1.5 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 3/4 cup chocolate chips
  • Topping (optional):
  • 1/2 cup chocolate chips
  • 1 tbsp butter or coconut oil

Instructions

  1. Preheat oven to 350°F and grease or line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix peanut butter and pumpkin puree until smooth.
  3. Whisk in eggs, maple syrup, and vanilla extract.
  4. In a separate bowl, mix cocoa powder, baking soda, and salt. Gradually add to the wet mixture and stir until combined.
  5. Fold in chocolate chips gently.
  6. Pour batter into the prepared pan and optionally sprinkle extra chocolate chips on top.
  7. Bake for 22–25 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  8. Let cool completely before cutting into squares.
  9. Optional: melt chocolate chips with butter and drizzle over cooled brownies before serving.
