Ingredients

  • 89 ripe pears, peeled, cored, and diced
  • 1 lemon, or 1/4 cup lemon juice
  • 6 tbsp fruit pectin powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1 1/2 cups honey (preferably Don Victor® or orange blossom)

Instructions

  1. Fill a water bath canner or large stockpot with water and bring it to a simmer. Add jars to sterilize and keep warm.
  2. Peel, core, and dice the pears, then place them in a large pot. Add lemon juice to prevent browning.
  3. Stir in the cinnamon, nutmeg, ginger, and ground cloves. Taste and adjust seasoning if desired.
  4. Add the fruit pectin and bring the mixture to a rolling boil for 1 minute, stirring constantly.
  5. Pour in the honey and boil again for 5–8 minutes until thickened. Test the set using a chilled plate.
  6. Carefully ladle the hot jam into warm sterilized jars, leaving 1/4 inch headspace. Wipe rims clean and seal with lids and rings.
  7. Place the jars in the canner, making sure they are fully submerged. Boil for 10 minutes (adjust for altitude).
  8. Remove jars with a jar lifter and place on a towel to cool for 12–24 hours. Listen for the “pop” sound as they seal.
  9. Label sealed jars and store in a cool, dark place. Refrigerate any unsealed jars and consume within 3 weeks.

Notes

  • Use fully ripe but firm pears for best flavor and texture.
  • Adjust spices to taste before adding the pectin.
  • The jam may take up to 48 hours to fully set after canning.
  • Use the plate test or a candy thermometer to ensure proper set.
  • This jam also works well as a glaze for meats or as a filling for baked goods.
