Ingredients

  • 3 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. In a small bowl or mason jar, combine lemon juice, honey, Dijon mustard, garlic, salt, and black pepper.
  2. Slowly drizzle in the olive oil while whisking continuously until the mixture emulsifies and thickens.
  3. Taste and adjust seasoning—add more honey for sweetness or more lemon juice for tanginess.
  4. Store in an airtight glass jar in the refrigerator for up to 7 days. Shake or whisk before each use.

Notes

  • Use freshly squeezed lemon juice for the best flavor.
  • For a vegan version, replace honey with maple syrup or agave nectar.
  • Add chopped fresh herbs like thyme or basil for extra aroma.
  • Can also be used as a marinade for chicken or vegetables.
