Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, chopped
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/3 cup roasted peanuts
  • 2 green onions, sliced
  • 4 dried red chilies or 1 teaspoon chili paste
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar or honey
  • 1 teaspoon sesame oil

Instructions

  1. Pat shrimp dry and toss with cornstarch.
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat.
  3. Add shrimp in a single layer and cook 1–2 minutes per side until just opaque. Remove and set aside.
  4. Add remaining oil to the skillet and sauté garlic, ginger, and dried chilies until fragrant.
  5. Add bell pepper and celery and stir-fry until crisp-tender.
  6. In a small bowl, whisk soy sauce, rice vinegar, sugar, and sesame oil.
  7. Return shrimp to the pan and pour in the sauce.
  8. Toss everything together and cook until the sauce thickens and coats the shrimp.
  9. Stir in peanuts and green onions, then remove from heat and serve.

  • Adjust spice level by increasing or reducing chilies.
  • Use gluten-free soy sauce if needed.
