Ingredients

  • 4 oz goat cheese (or 2 oz goat cheese and 2 oz blue cheese), at room temperature
  • 3 oz cream cheese, at room temperature
  • 5 tbsp unsalted butter, softened
  • 1/2 tsp hot sauce
  • 1/4 tsp salt
  • 1/3 cup chopped Medjool dates
  • 3 tbsp finely chopped scallions (white and green parts)
  • 1/3 cup salt-and-butter roasted pecans, chopped
  • 1 tbsp finely chopped flat-leaf parsley
  • For the roasted pecans: 2 cups pecan halves
  • 2 tbsp unsalted butter, melted
  • 3/4 tsp salt

Instructions

  1. In a mixer, combine goat cheese, cream cheese, butter, hot sauce, and salt. Mix on medium-low speed until well blended.
  2. Fold in the chopped dates and scallions. Cover and chill for 15 minutes to firm up.
  3. Place the mixture onto plastic wrap, gather the corners, and twist to form a rough ball. Chill for at least 1 hour until firm.
  4. In a shallow plate, combine chopped roasted pecans and parsley.
  5. Unwrap the cheese ball and roll it in the pecan-parsley mixture until evenly coated.
  6. Chill until ready to serve. Let sit at room temperature for 30 minutes before serving for spreadable texture.
  7. For pecans: Preheat oven to 350ºF. Toss pecans with melted butter and 1/2 tsp salt. Bake 9–11 minutes. Sprinkle remaining salt while hot and let cool.

Notes

  • Use whole Medjool dates, not pre-chopped or sweetened.
  • Cheese ball can be refrigerated for up to 3 days or frozen for 1 month.
  • Thaw frozen cheese ball overnight in fridge before rolling in coating.
  • Allow 30 minutes at room temperature before serving for best texture.
