1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
Pinch of salt
10 tablespoons unsalted butter, cold and cubed
1 large egg yolk
1 tablespoon cold water
2 to 2 1/2 cups fresh peach slices (or frozen, thawed and drained)
1 tablespoon lemon juice
2 tablespoons all-purpose flour (for filling)
1/2 cup granulated sugar (for filling)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
Instructions
Preheat oven to 375°F (190°C) and prepare an 8×8-inch baking pan with non-stick spray and parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Cut cold butter into the dry mixture using a pastry cutter or forks until it resembles coarse crumbs.
Add egg yolk and cold water, mixing just until combined; the dough will be crumbly.
Press half of the mixture into the prepared pan to form the crust.
In another bowl, toss peach slices with lemon juice, flour, sugar, cinnamon, nutmeg, and vanilla until evenly coated.
Spread peach filling evenly over the crust.
Sprinkle remaining crumble mixture over the top of the peaches.
Bake for 30–38 minutes or until golden brown and the filling is bubbly.
Allow to cool completely before slicing into bars and serving.
Notes
Use very cold butter and water for the best crumble texture.
Fresh peaches provide the best flavor, but frozen work well if thawed and drained.
For cleaner cuts, cool completely before slicing.
