Ingredients

Scale
  • 15.25 oz red velvet cake mix
  • 8 oz cream cheese, softened
  • 12 oz white almond bark
  • 3/4 cup red candy melts (optional, for garnish)

Instructions

  1. Heat-treat the cake mix by microwaving it in a heat-safe bowl for two 30-second intervals, stirring between each. Let it cool completely.
  2. In a mixing bowl, beat the softened cream cheese until smooth.
  3. Add the cooled cake mix to the cream cheese and mix until fully incorporated.
  4. Cover the mixture and chill in the refrigerator for 2 hours.
  5. Using a tablespoon cookie scoop, scoop and roll the dough into balls. Place them on a parchment-lined baking sheet.
  6. Melt the white almond bark in 30-second intervals in the microwave, stirring between each until smooth.
  7. Dip each chilled ball into the melted bark, tap off the excess, and return to the tray.
  8. Melt the red candy melts and drizzle over the coated bites for decoration.
  9. Let the coating harden completely before serving.

Notes

  • Let the bites reach room temperature before dipping to avoid chocolate cracking.
  • If the chocolate becomes too thick, reheat it in 15-second intervals.
  • Use a fork or toothpick to handle bites for cleaner coating.
  • Store in the refrigerator for up to 5 days or freeze uncoated bites for up to 2 months.
