Ingredients

  • 2 lbs beef tips or stew meat
  • 1 can (14 oz) beef broth
  • 1 packet onion soup mix
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch (for thickening)
  • 1/4 cup cold water (to mix with cornstarch)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (optional, for browning)
  • Optional: 1 cup sliced mushrooms
  • Optional: 1/4 cup red wine

Instructions

  1. Trim excess fat from the beef tips or stew meat.
  2. Optional: In a skillet over medium heat, add olive oil and brown the beef tips to enhance flavor.
  3. Place the beef in the slow cooker and sprinkle the onion soup mix evenly over the meat.
  4. Pour in the beef broth and Worcestershire sauce, ensuring the beef is covered.
  5. Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours, until beef is tender.
  6. About 30 minutes before serving, mix cornstarch with cold water and stir it into the slow cooker to thicken the gravy.
  7. Re-cover and let cook for 30 more minutes, until the sauce thickens.
  8. Season with salt and pepper to taste and serve over mashed potatoes, rice, or noodles.

Notes

  • For a richer flavor, add a splash of red wine or a few garlic cloves.
  • Always thicken the gravy near the end to prevent lumps.
  • Let the beef rest for 10–15 minutes before serving for the best texture.
  • Store leftovers in an airtight container for up to 3 days in the fridge or 3 months in the freezer.
