  • 8 oz egg noodles, cooked al dente
  • 1 lb lean ground beef
  • 1 can (15 oz) tomato sauce
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil or butter (for cooking)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the egg noodles in salted water until just al dente, then drain and set aside.
  3. In a large skillet, heat olive oil and cook ground beef over medium heat until browned. Drain any excess fat.
  4. Add diced onion, minced garlic, salt, pepper, and paprika. Sauté until fragrant.
  5. Pour in tomato sauce and simmer for 5–7 minutes to blend the flavors.
  6. In a separate bowl, combine sour cream, cottage cheese, and half of the shredded cheddar. Mix until smooth.
  7. Toss the cooked noodles in the sour cream mixture until evenly coated.
  8. Layer half of the noodle mixture in the prepared baking dish, then spread half of the beef sauce on top. Repeat layers.
  9. Sprinkle the remaining cheddar cheese over the top.
  10. Bake uncovered for 25–30 minutes until bubbly and golden brown.
  11. Let rest for 10 minutes before serving.

Notes

  • For a lighter version, substitute Greek yogurt for sour cream and use lean ground turkey.
  • To make it vegetarian, replace ground beef with mushrooms and lentils.
  • Freeze before or after baking for up to 3 months; thaw before reheating.
