4 cups green peas (fresh or frozen)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
3 cups vegetable broth
1/4 cup fresh herbs (mint, parsley, or basil)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon juice (optional)
Instructions
Heat olive oil in a pot over medium heat and sauté the onion until soft and translucent.
Add garlic and cook for about 30 seconds until fragrant.
Add green peas and vegetable broth, then bring to a gentle simmer.
Cook for 5–7 minutes, just until the peas are tender.
Remove from heat, add fresh herbs, and blend until smooth.
Season with salt, pepper, and lemon juice if using. Serve warm or chilled.
Notes
Do not overcook the peas to preserve color and flavor.
Frozen peas work just as well as fresh peas.
For extra creaminess, add a small amount of yogurt or coconut milk.
Store leftovers in an airtight container for up to 3 days.
