Ingredients

  • 2 large English cucumbers, sliced
  • 2 cups corn kernels (fresh, grilled, or canned and drained)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt (adjust to taste)
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped green onions
  • 1/4 cup crumbled cotija or feta cheese (optional)

Instructions

  1. Wash and slice the cucumbers, then lightly salt them and let sit for 10 minutes to release excess moisture.
  2. Pat the cucumbers dry with a paper towel and set aside.
  3. If using fresh or frozen corn, lightly grill or pan-roast it until fragrant, then let it cool.
  4. In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt until smooth.
  5. Add the cucumbers and corn to the bowl and gently toss to coat with the dressing.
  6. Fold in cilantro, green onions, and cheese if using.
  7. Chill for 20–30 minutes before serving, then stir and adjust seasoning if needed.
