  • 1 tablespoon ground turmeric
  • 1/2 teaspoon black pepper
  • 8 cups chicken broth
  • 2 cups fresh spinach, chopped
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery, and cook for about 5 minutes until softened.
  3. Stir in minced garlic and grated ginger and cook for about 30 seconds until fragrant.
  4. Add ground turmeric and black pepper, stirring well to coat the vegetables.
  5. Pour in the chicken broth and bring the mixture to a gentle simmer.
  6. Add the chicken to the pot and allow it to cook in the broth for about 15 minutes until fully cooked and tender.
  7. Remove the chicken from the pot, shred it using two forks, then return it to the soup.
  8. Add chopped spinach and simmer for another 2–3 minutes until wilted.
  9. Taste the soup and adjust seasoning with salt if needed.
  10. Stir in lemon juice if desired and serve warm, garnished with fresh parsley.
