Ingredients

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

1/2 teaspoon salt
1 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup unsalted butter, softened
1 large egg
1 cup apple cider
1 teaspoon vanilla extract
Filling:

1/2 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1-2 tablespoons apple cider

Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a large bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
Beat in the egg, apple cider, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
For the filling, beat together softened butter, powdered sugar, vanilla extract, and apple cider until smooth and creamy.
Once the whoopie pies have cooled, spread a generous amount of filling on the flat side of one pie and sandwich with another pie.
