Instructions

  1. Prepare apple filling: Cook diced apples, brown sugar, butter, cornstarch, and cinnamon in a skillet over medium-low heat until tender. Cool in fridge.
  2. Make cookie dough: Cream butter and sugars, add eggs and vanilla. Mix dry ingredients separately and combine. Chill dough.
  3. Prepare streusel: Mix flour, sugars, salt, cinnamon. Add melted butter and mix with fork until crumbly.
  4. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  5. Assemble cookies: Roll dough into 2-tablespoon balls, indent centers, fill with apple mixture, and top with streusel.
  6. Bake for 13–14 minutes until edges are golden. Cool completely.
  7. Make buttercream: Beat butter, salt, and vanilla, then gradually mix in powdered sugar until thick like playdough.
  8. Make glaze: Whisk powdered sugar, milk, and vanilla until smooth.
  9. Decorate cookies: Drizzle glaze, then add 1-tablespoon scoop of buttercream “ice cream” on top.

  • Use firm apples like Granny Smith for best texture and flavor.
  • Chilling the dough helps prevent spreading during baking.
  • Do not press cookie indent too deep or the filling may fall through.
  • All components can be made ahead and assembled just before baking.
