Ingredients

  • 4 cups mixed greens (5 oz/142g container)
  • 12 tart apples, sliced (Honeycrisp or Pink Lady recommended)
  • ½ cup thin-sliced sharp white cheddar cheese
  • ½ cup candied or toasted pecans
  • ½ cup dried cranberries
  • 2 tablespoons balsamic vinegar
  • ¼ cup olive oil
  • 1 tablespoon minced shallot (about ½ shallot)
  • 2 teaspoons real maple syrup (or brown sugar)
  • 1 teaspoon fresh rosemary or sage (or a combination)
  • ½ teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. In a mason jar, add balsamic vinegar, olive oil, minced shallot, maple syrup, Dijon mustard, fresh herbs, salt, and pepper.
  2. Screw the lid on tightly and shake vigorously for about 10 seconds until emulsified.
  3. Wash and dry the mixed greens using a salad spinner for extra crispness.
  4. Slice apples thinly or into bite-sized chunks. Toss with lemon juice to prevent browning if preparing ahead.
  5. Slice or cube the cheddar cheese into uniform pieces.
  6. In a large bowl, combine greens, apples, cheese, pecans, and cranberries.
  7. Toss with vinaigrette just before serving or serve dressing on the side.
  8. For presentation, reserve some toppings to scatter on top after tossing.
