Ingredients

  • 1 cup dried apricots
  • 1/2 cup almonds or cashews
  • 1/2 cup rolled oats
  • 1/4 cup shredded coconut
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Add dried apricots and nuts to a food processor.
  2. Pulse until the mixture becomes finely chopped.
  3. Add rolled oats, shredded coconut, honey or maple syrup, and vanilla extract.
  4. Blend until the mixture becomes sticky and well combined.
  5. Scoop small portions of the mixture using a spoon.
  6. Roll each portion into small balls using your hands.
  7. Place the balls on a tray lined with parchment paper.
  8. Refrigerate for about 30 minutes to allow them to firm up before serving.

Notes

  • If the mixture is too dry, add a small amount of honey or water.
  • If the mixture is too sticky, add a little more oats or coconut.
  • Soft dried apricots work best for blending.
  • Store the bliss balls in the refrigerator in an airtight container.
