Ingredients

  • 6 chicken legs, skin-on, bone-in
  • 3 apples (Golden Delicious or similar)
  • 3 yellow onions
  • 2 tablespoons olive oil
  • 23 sprigs of fresh rosemary or thyme
  • Salt and pepper to taste
  • Optional: 1/2 cup apple cider or water

Instructions

  1. Preheat oven to 375°F (190°C), no fan.
  2. Season chicken generously with salt and pepper, including under the skin.
  3. Quarter and core the apples (do not peel).
  4. Cut onions into thick slices.
  5. Place chicken, apples, and onions into a large baking dish or sheet pan.
  6. Drizzle olive oil over everything.
  7. Tuck in rosemary or thyme sprigs.
  8. Bake uncovered for 90 minutes until chicken is tender and falling off the bone.
  9. For extra crisp skin, broil for 5–10 minutes at the end of baking.

Notes

  • If using a larger dish with spaced ingredients, add apple cider or water to prevent drying.
  • Substitute chicken legs with thighs or drumsticks; adjust baking time accordingly.
  • Golden Delicious, Braeburn, or Honeycrisp apples are ideal for baking.
