Ingredients

Scale
  • 34 lb corned beef brisket (with spice packet)
  • 23 tablespoons Dijon or whole grain mustard
  • 23 cloves garlic, minced
  • 1/4 cup water or low-sodium beef broth
  • Optional: 1 tablespoon brown sugar
  • Optional: 1 small onion, sliced

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Remove brisket from packaging, discard excess brine, rinse lightly, and pat dry.
  3. Place brisket fat side up on a large sheet of heavy-duty foil in a roasting pan.
  4. Spread mustard evenly over the top and sprinkle with the spice packet and minced garlic.
  5. Add water or broth to the bottom of the foil packet.
  6. Wrap the brisket tightly in foil to seal in moisture.
  7. Bake for 45–50 minutes per pound (about 2 ½–3 ½ hours depending on size).
  8. Check internal temperature; it should reach 195–205°F for fork tenderness.
  9. Remove from oven and let rest, wrapped, for 15–20 minutes.
  10. Slice against the grain and serve warm.

Notes

  • Always bake fat side up for natural basting.
  • Do not skip resting time to keep the meat juicy.
  • Slice against the grain for maximum tenderness.
  • If brisket feels tough, return to oven and cook longer.
  • Store leftovers in an airtight container for up to 4 days.
