Ingredients

  • 1 cup coarsely chopped pecans
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips

Instructions

  1. Spray a 9-inch square baking dish with cooking spray and line with parchment paper.
  2. Spread chopped pecans in a single layer on the parchment paper.
  3. In a heavy-bottomed saucepan, add butter, sugar, and salt. Heat over medium-low, stirring frequently to dissolve the sugar.
  4. Once boiling, stir occasionally until mixture reaches 290°F–300°F on a candy thermometer.
  5. Remove from heat and stir in vanilla extract.
  6. Carefully pour the hot mixture over the pecans in the baking dish.
  7. Let the candy sit undisturbed for a few minutes.
  8. Sprinkle chocolate chips on top and cover the dish with foil. Let sit for 5 minutes.
  9. Remove foil and spread melted chocolate evenly over the top.
  10. Refrigerate for at least 2 hours or until fully set.
  11. Lift parchment from the pan and break toffee into pieces.
  12. Store in an airtight container in a cool place.
