4 cups cooked cold rice
2 cups diced cooked chicken
2 eggs
1/4 cup soy sauce
1 tbsp sesame oil
2 tbsp butter
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 cup frozen peas and carrots
3 green onions, chopped
Instructions
Heat oil in a large skillet or wok.
Cook chicken until golden and heated through.
Remove chicken and set aside.
Scramble eggs and remove from pan.
Sauté onion, garlic, peas, and carrots.
Add cold rice and break apart clumps.
Stir fry rice until heated through and lightly crispy.
