Ingredients

  • 1/2 cup dried black tapioca pearls
  • 4 cups water (for cooking pearls)
  • 2 cups water (for brewing tea)
  • 2 black tea bags or 2 teaspoons loose-leaf tea
  • 1/2 cup milk or plant-based milk
  • 23 tablespoons brown sugar (for syrup)
  • 12 tablespoons white sugar or honey (to taste)
  • Ice cubes (as needed)

Instructions

  1. Bring 4 cups of water to a rolling boil in a pot.
  2. Add tapioca pearls and stir gently to prevent sticking.
  3. Boil for 20–25 minutes, then remove from heat and let pearls rest in hot water for 10 minutes.
  4. Drain pearls and transfer to a bowl with brown sugar syrup to sweeten.
  5. Brew black tea in 2 cups of hot water until strong, then let it cool.
  6. In a glass, add cooked pearls, ice, brewed tea, milk, and additional sweetener if desired.
