  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour

  • 3 tablespoons bourbon (divided)
  • 1/2 teaspoon cinnamon (divided)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper and grease it thoroughly.
  2. Arrange the peach slices in a circular pattern starting from the center of the pan. Sprinkle with 1/4 teaspoon cinnamon.
  3. To make the caramel, combine 1/4 cup water with 1/2 cup sugar in a saucepan. Heat over medium-high until it turns amber (10–15 minutes). Remove from heat, stir in 1 tablespoon bourbon, and pour over peaches.
  4. In a bowl, beat 1 stick butter and 3/4 cup sugar until fluffy. Add eggs one at a time, then beat in 2 tablespoons bourbon and vanilla extract.
  5. Whisk together all-purpose flour, almond flour, baking powder, and remaining 1/4 teaspoon cinnamon. Slowly incorporate the dry mix into the wet batter until smooth.
  6. Pour batter over the peaches and smooth the top. Bake for 30–35 minutes or until a toothpick comes out clean.
  7. Let the cake cool for 15–30 minutes. Run a knife along the edges, place a plate on top, and carefully flip to release the cake.
