Instructions

  1. In a large pot or Dutch oven, sauté the sausage, onion, and celery over medium heat until the onion starts to soften.
  2. Stir in the garlic and cook for 30 seconds.
  3. Add the flour and stir well; cook for 1 minute to form a light roux.
  4. Pour in the chicken broth, milk, heavy cream, and Cajun seasoning. Stir until combined.
  5. Add the diced potatoes and bring to a gentle simmer.
  6. Simmer for 10–15 minutes or until the potatoes are fork-tender.
  7. Adjust seasoning with salt and pepper as needed. Serve hot, topped with shredded cheese and green onions if desired.
