Ingredients

  • 1 lb Campari tomatoes on the vine
  • 1 tablespoon olive oil
  • 1 clove garlic, thinly sliced
  • Salt and pepper, to taste
  • Optional: Fresh thyme, rosemary, balsamic glaze, crushed red pepper

Instructions

  1. Preheat oven to 375°F (190°C) for oven roasted or 250°F (120°C) for slow roasted.
  2. Slice Campari tomatoes in half (or thirds if large).
  3. Arrange cut side up on a parchment-lined baking sheet.
  4. Scatter thinly sliced garlic over tomatoes.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Optional: Add herbs like thyme, rosemary, or a splash of balsamic vinegar.
  7. For oven roasted: Roast for 30 minutes, or until soft and starting to wrinkle.
  8. For slow roasted: Roast for 2.5 to 3 hours, checking occasionally.
  9. Remove from oven and cool before serving or storing.
