4 large oranges
2 cups granulated sugar
2 cups water
Extra sugar for coating (optional)
Dark chocolate for dipping (optional)
Instructions
Wash the oranges thoroughly and slice off the tops and bottoms.
Score the peel into four sections and remove each section carefully.
Cut the peels into thin, even strips.
Place peels in a saucepan, cover with cold water, bring to a boil, then drain. Repeat this process two more times to remove bitterness.
Combine sugar and water in the saucepan and bring to a gentle simmer.
Add the blanched peels and simmer for 40–45 minutes until translucent.
Remove peels and place on a wire rack or parchment paper to dry.
Once dry, roll in sugar or dip in melted chocolate if desired.
Notes
Use organic oranges when possible since the peel is consumed.
Do not rush the blanching step or the peels may stay bitter.
Dry completely before storing to prevent stickiness.
Can be made with other citrus peels like lemon or grapefruit.
