Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Combine 2 cups flour and 1/2 cup brown sugar in a bowl. Cut in 1 cup cold butter until crumbly. Press mixture into the prepared pan.
  3. Bake the crust for 15–18 minutes or until lightly golden. Remove and let cool slightly.
  4. In a large bowl, beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
  5. Pour the cheesecake mixture over the cooled crust.
  6. In a bowl, toss diced apples with 2 tablespoons sugar and cinnamon. Spread evenly over cheesecake layer.
  7. For the streusel, combine 1/2 cup brown sugar, oats, 1/2 cup flour, and 1/4 cup cold butter. Mix until crumbly and sprinkle over apples.
  8. Bake for 35–40 minutes until the center is set.
  9. Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours before slicing.
  10. Drizzle caramel sauce over bars before serving.
