  • 1 cup canned 100% pure pumpkin (for cake)
  • 1 tsp pumpkin pie spice (for cake)
  • 3/4 cup milk
  • 1/2 cup canola or vegetable oil
  • 4 large eggs
  • 8 oz cream cheese, softened
  • 1 can (15 oz) canned 100% pure pumpkin (for filling)
  • 1 cup confectioners’ sugar
  • 1 tsp pumpkin pie spice (for filling)
  • 8 oz Cool Whip or whipped topping
  • 1/2 cup caramel ice cream topping (divided)
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
  2. In a large bowl, combine dry cake mix and 1 tsp pumpkin pie spice.
  3. Add 1 cup pumpkin, milk, oil, and eggs. Beat until smooth (about 2 minutes).
  4. Pour into prepared pan and bake for 28–30 minutes or until a toothpick comes out clean. Let cool completely.
  5. Cut cake into 1-inch cubes.
  6. In another bowl, beat softened cream cheese until smooth.
  7. Add 1 can pumpkin, confectioners’ sugar, and 1 tsp pumpkin pie spice. Beat until combined.
  8. Fold in Cool Whip until mixture is fluffy and uniform.
  9. Layer half the cake cubes in a trifle bowl. Drizzle with 2 tbsp caramel topping.
  10. Spread half of the cream mixture on top. Drizzle with 1/4 cup caramel topping.
  11. Repeat layers with remaining cake and cream. Top with chopped pecans.
  12. Cover and refrigerate overnight or at least 6–8 hours before serving.

Notes

  • Use only 100% pure pumpkin, not pumpkin pie filling.
  • Cool Whip can be replaced with homemade whipped cream.
  • Sprinkle pecans just before serving for maximum crunch.
  • Best consumed within 2–3 days; stores up to 5–6 days in fridge.
  • Don’t freeze fully assembled trifle; cake layer can be frozen separately.
