  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp lime juice (freshly squeezed)
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Slice bell peppers and onion into thin strips.
  3. Arrange chicken breasts in the baking dish and drizzle with olive oil.
  4. Sprinkle fajita seasoning evenly over the chicken.
  5. Scatter sliced peppers and onions around and over the chicken.
  6. Drizzle with lime juice and top with minced garlic.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove foil, sprinkle shredded cheeses on top, and bake uncovered for an additional 10–15 minutes.
  9. Broil for 2 minutes if desired, until cheese is bubbly and golden brown.
  10. Let rest for 5 minutes before serving to retain juiciness.
