1/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
2 large eggs, room temperature
1/2 cup unsalted butter, melted (or neutral oil)
1/2 cup milk or buttermilk
1 teaspoon vanilla extract
1 1/2 cups fresh cherries, pitted and chopped
1 tablespoon flour (for tossing cherries)
1/2 cup semi-sweet chocolate chips
Instructions
Preheat oven to 350°F and line a 9×5-inch loaf pan with parchment paper.
Wash, pit, and chop the cherries. Pat dry and toss with 1 tablespoon of flour to prevent sinking.
In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
In a separate bowl, whisk eggs and sugar until slightly pale. Add melted butter, milk, and vanilla extract. Mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.
Fold in the floured cherries and chocolate chips evenly.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Do not overmix the batter to keep the loaf tender.
If using frozen cherries, thaw and drain thoroughly before adding.
A thin chocolate glaze can be added after cooling for extra richness.
