  • 2 eggs (lightly beaten)
  • 1 cup breadcrumbs (Panko or Italian-style)

  • Salt and pepper to taste

Instructions

  1. Slice each chicken breast horizontally to create thinner cutlets.
  2. Place between plastic wrap and pound to 1/4-inch thickness.
  3. Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan.
  4. Dredge chicken cutlets in flour, then eggs, then breadcrumbs. Press lightly to ensure coating sticks.
  5. Let coated cutlets rest for 10 minutes to help the breading set.
  6. Heat oil in a skillet over medium-high heat until hot but not smoking.
  7. Fry cutlets for 3–4 minutes per side until golden and cooked through (internal temp 165°F).
