Ingredients

Scale
  • 6 chicken thighs (bone-in or boneless)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil (for chimichurri)
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the chimichurri sauce by combining chopped parsley, minced garlic, olive oil, vinegar, oregano, and red pepper flakes in a bowl.
  2. Mix well and allow the sauce to sit for about 10 minutes so the flavors blend.
  3. Pat the chicken thighs dry and season them with olive oil, salt, and black pepper.
  4. Optionally coat the chicken lightly with a few spoonfuls of chimichurri sauce as a marinade.
  5. Heat a grill or skillet over medium heat.
  6. Cook the chicken thighs for about 6–7 minutes per side until fully cooked.
  7. If baking, cook in a 400°F oven for about 25–30 minutes until the internal temperature reaches 165°F.
  8. Remove the chicken from heat and let it rest for a few minutes.
  9. Spoon fresh chimichurri sauce over the chicken before serving.
  10. Serve warm with rice, vegetables, or salad.

Notes

  • Fresh herbs are essential for authentic chimichurri flavor.
  • Let the chimichurri sauce rest before using so the ingredients blend together.
  • Chicken thighs remain juicier than chicken breasts when cooked.
  • You can grill, bake, or pan-sear the chicken depending on your preference.
  • Leftover chimichurri sauce can be used for vegetables or other grilled foods.
