1/2 cup chopped cilantro
2 cloves garlic, minced
Salt to taste
Black pepper to taste

2 tablespoons chopped cilantro
Pinch of salt
Avocado (optional)
Black beans (optional)
Corn (optional)
Instructions

Add chicken and coat well. Marinate for 15 minutes or up to 4 hours.
In another bowl, combine peaches, red onion, jalapeño, lime juice, cilantro, and salt to make the peach salsa.
Refrigerate salsa until ready to serve.
Grill, bake, or pan-sear chicken until fully cooked to 165°F internal temperature.
Let chicken rest for 5 minutes, then slice.
Warm cooked rice or quinoa and divide into serving bowls.
Top bowls with sliced chicken and spoon peach salsa over each serving.
Add optional toppings like avocado, black beans, or corn and serve immediately.
Notes
Use ripe peaches for the best flavor and texture.
Fresh lime juice gives the brightest taste.
Chicken thighs stay juicier than chicken breasts.
Store chicken, rice, and salsa separately for meal prep.
